You couldn't watch the earth rise because the moon is tidally locked to the earth, meaning the same face always points toward us. The earth would either be always up or always down. The famous Apollo picture of the earth rising was because the astronauts were orbiting the moon. Still, it would be fun to watch the earth go through phases and rotate.
